The Best Healthy Paleo Strawberry Shortcake Recipe (Super Easy!)
This healthy-take on Strawberry Shortcake is Paleo, vegan and gluten/grain/dairy free!
Summer time is on its way which means picnics, cookouts and 4th of July celebrations. We’ve struggled in the past to find a healthier dessert option for these occasions, so we thought, why not create our own!
Our healthy Paleo Strawberry Shortcakes are deliciously sweet and moist, but are much better for you than your traditional recipe. Ours are free of refined sugar, and use whole food ingredients like strawberries, almond milk and coconut oil. And because we’d rather be outside enjoying our families than slaving away in the kitchen, we use a secret weapon: Paleo pancake mix, which makes these scrumptious shortcakes super simple to throw together in less than 30 minutes.
These Strawberry Shortcakes would be the perfect single-serving dessert to prepare for your July 4th party, and get 2 big thumbs up from the entire family. Everyone will swoon for the taste of fresh berries and whipped cream…yum!
1 container strawberries, sliced vertically
1/8 cup + 3 tbsp coconut sugar
2 1/3 cup Paleo pancake mix
1/2 cup almond or coconut milk
3 tbsp coconut oil, melted
coconut whipped cream, store-bought
Preheat oven to 425F.
In a medium bowl, mix strawberry slices and 1/8 cup coconut sugar. Set aside.
In another medium bowl, stir pancake mix, almond or coconut milk, 3 tbsp coconut sugar and coconut oil until soft dough forms.
Use a cookie scoop to measure out 8 shortcakes. Gently shape them into biscuit shapes and place onto a parchment-lined baking sheet.
Bake 10–11 minutes or until golden brown.
Once cooled, cut shortcakes in half horizontally. Fill with strawberry mixture and coconut whipped cream.
