Mini Berry Cheesecakes are simple to make and the layers of graham cracker crust and berry cheesecake make them perfectly “poppable”!

INGREDIENTS
- 3 oz. graham crackers
- 2 tbsp butter, melted
- ½ cup blueberries + extra for topping
- ½ cup strawberries, diced + extra for topping
- 8-oz block of cream cheese or Neufchatel cheese
- ¼ cup + 3 tbsp granulated sugar
- 1 egg
- ½ tsp pure vanilla extract
INSTRUCTIONS
1.) Preheat oven to 350F. Place liners in a mini muffin tin.
2.) Pulse graham crackers in a food processor until they become fine crumbs. Mix in melted butter.
3.) Press a spoonful of graham cracker mixture into the bottom of each muffin compartment.
4.) In a small saucepan, heat berries over low heat until they are warm and soft. Mash with a masher or fork and allow to cool.
5.) In a mixing bowl beat cream cheese, sugar, eggs and vanilla until smooth. Drain berries of excess liquid and gently fold into the cream cheese mixture.
6.) Top graham cracker mixture with berry cream cheese.
7.) Bake for 15 minutes. Allow cheesecakes to cool then top with fresh berries.
Makes 3 dozen mini cheesecakes.
This recipe can easily be doubled to make for a larger crowd and can be made ahead and frozen until you need them.
You can also make this recipe with ingredient swaps depending on your family’s preferences or dietary choices. These cheesecakes can be made gluten free by using gluten free graham crackers or dairy free by using dairy free cream cheese (we like the Kite Hill brand).
