Ok friends, today we’re sharing a super simple, delicious treat to serve at your 4th of July celebration that your kids will totally en-hale. Patriotic Watermelon Pizza. It’s got red, it’s got white, it’s got blue…and it’s got pizza written all over it. Totally genius, right? I mean, what kid doesn’t like pizza?!

This “dessert” is not only a showstopper (I could hardly keep my kids’ hands away from it long enough to take these pictures), but it’s insanely healthy, and made from store-bought ingredients. No baking, cooking or slaving in the kitchen involved. Fist bump America.

So I think it’s fairly obvious from the mouthwatering pictures how to create this patriotic wonder, but here’s a quick run-down.

First, you have to buy the whole-stinkin’-ginormous watermelon that you never want to buy because it weighs more than your child and reminds you of your horrendous last week of pregnancy where your size was related to this gargantuan fruit way more times than you bargained for. But sorry ladies, there’s just no way around it. Get ready for a bicep workout and plop that big puppy in your cart.

So take said mammoth melon, cut off the end, and start slicing 1” rounds. Choose one of the larger rounds as the base for your pizza. Then grab your favorite Greek yogurt (I used plain, but vanilla or any other flavor that is white will work just as well) and dollop some in the middle.

Use the back of a spoon or fancy off-set spatula to spread it out into a nice circle. Leave a little of the watermelon showing before the rind so you get the “red” popping through (yes, I know it’s really pink, but come on, it’s close enough).

OK, next, thinly slice some strawberries and layer them on top of the yogurt. Then sprinkle on some blueberries and white chocolate chips and you, my lovelies, have yourself one delicious, patriotic-looking “pizza”.
