Healthy Chocolate Chip Pumpkin Bread

This healthier chocolate chip pumpkin bread is packed full of protein, whole ingredients and is gluten-free. Just watch it get gobbled up!

Ingredients
  

  • 2 cups gluten free flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin spice
  • 1 cup coconut sugar
  • 1/4 cup butter
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/3 cup vanilla Greek yogurt
  • 1 tsp pure vanilla extract
  • 1/4 cup mini chocolate chips

Method
 

  1. Preheat oven to 350°
  2. Spray a loaf pan with cooking spray
  3. Measure flour and level with a knife
  4. Mix dry ingredients in a medium bowl
  5. Put sugar and butter in a large bowl and beat until well blended
  6. Add eggs one at a time and beat well
  7. Add in the pumpkin puree, yogurt and vanilla and beat until blended
  8. Add dry ingredients to wet ingredients, in three parts, until just blended
  9. Stir in chocolate chips or other add-ins if you are using
  10. Pour batter into prepared pan
  11. Bake at 350° for 45 minutes or until a toothpick comes out clean
  12. Cool for 10 minutes in the pan, then slide bread out and place on a baking rack until cool
