Method
- Drizzle olive oil into a skillet and heat to medium heat. Cook peppers and onions until translucent.

- Spread 1 tbsp Dijonnaise on each tortilla. Place tortilla onto air fryer basket.
- Layer 4 oz roast beef, ¼ cup mozzarella cheese and ¼ of the veggies onto the tortilla. Carefully fold tortilla in half to create a half moon shape.

- Air fry for 4 minutes per side at 350F.

Notes
Eat immediately or store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
