Pizza Egg Muffins
These Pizza Egg Muffins are a healthy, make ahead breakfast packed with protein and veggies. They’re toddler and kid-friendly and perfect for busy mornings.

- 12 eggs
- 1/3 cup milk
- 1 cup spinach, chopped
- 3 tbsp pizza sauce
- 1/2 tsp salt
- 1 pinch pepper
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 8 slices pepperoni, chopped
- 1/2 cup mozzarella cheese, grated
- 2 tbsp flour
Preheat oven to 350 F
Place 12 muffin liners into a muffin pan and spray with cooking spray.
Whisk eggs and milk in a large bowl until well incorporated, but not over beaten.
Stir in chopped spinach, pizza sauce, and seasonings.
Evenly pour mixture into prepared muffin liners.
Top with chopped pepperoni and then cover with cheese.
Bake for 20 minutes or until the tops are no longer wet and spring back slightly to touch.Allow to cool for a few minutes before eating.
