Pizza Egg Muffins

These Pizza Egg Muffins are a healthy, make ahead breakfast packed with protein and veggies. They’re toddler and kid-friendly and perfect for busy mornings.

Ingredients
  

  • 12 eggs
  • 1/3 cup milk
  • 1 cup spinach, chopped
  • 3 tbsp pizza sauce
  • 1/2 tsp salt
  • 1 pinch pepper
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 8 slices pepperoni, chopped
  • 1/2 cup mozzarella cheese, grated
  • 2 tbsp flour

Instructions
 

  • Preheat oven to 350 F
  • Place 12 muffin liners into a muffin pan and spray with cooking spray.
  • Whisk eggs and milk in a large bowl until well incorporated, but not over beaten.

  • Stir in chopped spinach, pizza sauce, and seasonings.

  • Evenly pour mixture into prepared muffin liners.
  • Top with chopped pepperoni and then cover with cheese.

  • Bake for 20 minutes or until the tops are no longer wet and spring back slightly to touch.
    Allow to cool for a few minutes before eating.
