Did you know that the 3rd Sunday in July is National Ice Cream Day?! Talk about our new favorite holiday!

To celebrate, we’ve partnered with one of our favorite grocery stores, Stop & Shop, to create a unique and easy ice cream sandwich recipe.

But this isn’t any old ice cream sandwich. We’ve upped the ante by replacing your traditional chocolate chip cookies, with buttery waffles. The combination is insanely delicious, and it’s easy to whip up a batch to enjoy this July 19th…or any other day your craving for ice cream strikes!

HOW TO MAKE WAFFLE ICE CREAM SANDWICHES

OK, first – you can make these as “homemade” as you like, but we’re going to be honest – as busy moms, we took the semi-homemade approach and used a boxed waffle mix (the Nature’s Promise organic buttermilk pancake/waffle mix is our favorite) and store-bought ice cream.

Stop & Shop is having a blockbuster sale on ice cream for the occasion, with insane savings on Turkey Hill and Haagen Dazs, which made it a complete no-brainer.

So grab your favorite ice cream flavors to make these Waffle Sandies, and stock your freezer for the summer while you’re at it!

And yes – you could even use frozen waffles. No judging here!

INGREDIENTS

By taking the semi-homemade approach, you don’t need many ingredients at all:

  • 1 Box of pancake/waffle mix
  • 1+ Cartons of Ice Cream*
  • Optional: Fun toppings!

*A regular 1.5 quart carton of ice cream will fill approximately 3 waffle sandwich rounds (total of 12 individual sandwiches once cut)

INSTRUCTIONS

(1)  Follow the directions on your waffle mix to make the batter.

(2)  Scoop the batter into your hot waffle iron and close the lid. Cook to desired level of doneness.

(TIP: we found that cooking them slightly longer to have them a little crispy made for a great contrast to the soft ice cream!)

(3)  Once you’ve made your waffles, make sure they are fully cooled before moving onto the next step.

(4). Take a cooled waffle round and scoop your ice cream into the middle. Using a knife or off-set spatula, spread the ice cream in an even layer, about an inch thick, all the way to the edges.

TIP: For easier spreading, leave your ice cream out of the freezer for 10+ minutes so it is slightly softened.

(5)  Place another waffle on top, making sure to match up the “cut” lines.

(6)  Place in the freezer for 30+ minutes to fully harden.

(7)  Remove from the freezer and cut into 4 triangles.

(8)  Pour sprinkles onto a plate and dip in the sides.

You can dress-up your waffle ice cream sandwiches in so many different ways – use traditional sprinkles, non-pareils, chocolate chips, nuts, cookie crumbles, or just leave them as is!

They are so easy to make, and a great little “cooking” project that your kids can help with (especially the sprinkle dipping!). And they’ll certainly enjoy eating them!

These Waffle Ice Cream Sandwiches will keep in your freezer (stored in plastic freezer baggies) for up to 3 months, so make a big batch and have them ready as a summer-time treat.

Trust us, once your kids get a hold of these, they will not last long!
